The dinner is based on the quote by Michael Pollan, “We are what we eat, it is often said but of course that is only part of the story. We are what what we eat eats too.” 

Plated and seated event with a blind tasting of, grain fed, corn fed, & grass fed brisket, as well as, farmed, ethically farmed, & wild caught salmon. 

Diners will arrive to a freshly shucked Lowcountry Oyster with a brunoise apple mignonette paired with a shot of smoked Gazpacho.

The main event:

A blind tasting of three briskets and three salmon raised completely different, but cooked the exact same way and paired with wine from Haw River Wine Man.

To finish a Puerto Rican inspired Limbal for dessert.
